Recipes for home vegetable gardens
Some people will grow vegetables in their home vegetable gardens for a hobby and some really don’t have a bigger enough garden to feed the family, although home vegetable gardening and planting with containers makes this more of a possibility. Many people take their vegetable gardens more seriously and have had more experience so they know about companion planting and how best to deal with unwanted pests in their home vegetable garden. It is a great thing to be able to grow vegetables yourself and then make something creative which you have grown from your garden.
Here is something for you to try.
Baked stuffed onions
Baked stuffed onions always seem to go down well whoever I serve them to. Use different fillings for different occasions. You can use almonds, feta, olives, chili. You can even use hot spices.
4 white onions
4 rashers of bacon, chopped
3 cloves garlic, chopped
3 sprigs rosemary, chopped
Piece of tin foil to wrap the onions in
- Hollow the inside of the onion out with a knife, leaving the bottom intact
- Chop the inside up
- Add the chopped onion to a pan with the olive oil and add the bacon, garlic and rosemary.
- Now stuff them in the onion and wrap the tin foil around the onion
- Leave in the oven at 180°c for about 1 hour

Peppers with garlic and feta in olive oil
I love roasting sweet peppers. You can use them in a salad, in a sauce or just as a snack. Here I added some feta as a kind of marinade. If you are looking for low-GI vegetarian recipes then this would definitely be suitable.
4 sweet peppers of different colors
1 cup olive oil
3 cloves garlic, chopped fine
2Tbsp feta, crumbled
8 basil leaves, chopped
Salt and pepper
- Set the oven to 200°c
- Put the peppers in the oven until the skin goes black,
- then put them in a bowl
- Cover with some cling wrap
- Fry the garlic with some olive oil
- Peel the skins off the peppers and tear them up into strips
- Put them into a mixing bowl and mix with the olive oil
- Add the feta, basil and garlic
- Add salt and pepper
- It’s good to store this in a container in the fridge to marinade
